Pierogi Dough
Soft, great chew and tough enough to sauté crispy

Makes: 3 dozen pierogis'
Things You Need:
- 4 cups AP flour
- 3 each Large eggs
- 2 tablespoons salt
- 1 cup Whole milk, Warmed
How to make:
Sift Flour and salt together in to a bowl.
Make a well in the middle of the bowl, add the eggs and the warmed milk. Mix the milk and eggs together and begin to bring in the flour from the sides, until dough forms. Continue kneading until dough is smooth to the touch.
This can also be achieved in a mixer with a dough hook attachment.
Pull dough out from bowl and let rest 10-15 mins.
Cut dough into manageable pieces and roll out to 1/16 inch thick. Using a 3 inch circle cutter, cut as many circles as possible. Place in side of each circle 1 tsp of your filling and fold over to form a 1/2 moon shape. Crimp the edges using your fingers or the tines of a fork.
Have boiling salted water going and drop each pierogi into the water. Slowly stir and pull the perogi out when they float to the surface.
Toss pierogi in butter and enjoy.

Farmers Cheese Potato Filling
Fluffy, flavorful classic filling

Things you need:
- 4 large Russet Potatoes, peeled and chopped
- 1 cup Farmers Cheese
- 4 Ounces American cheese
- 2 Tablespoon salt
Here's how:
Simmer potatoes in salted water for 15-20 minutes until mash able. Drain them, add both cheese and incorporated together until smooth. Cool and set aside.
Sauerkraut

- 2 pounds Sauerkraut
- 2 Tablespoon Salt
Here's how:
Drain and press as much liquid possible from kraut. Season with salt and set aside.
Forest Mushroom

Things you need:
- 2 pounds Shiitake mushrooms stemmed and quartered
- 1 pound Portabella mushroom, medium dice
- 1 pound Button mushrooms medium dice
- 1 pound Cremini mushrooms, medium dice
- 2 ounces Salt
- 3 ounces Canola Oil
Here's How:
Sauté mushrooms until dry, cool and set aside.
Buttered Onions
The best thing about butter

Things you need
- 2 pounds Yellow onions, julienne
- 1 pound Butter
Here's How:
Under a low and slow flame cook the onions in melted butter until they soften and caramelize. Do not to stir much. Let the heat bring out the sugars. Cool and set aside.
Dark Cherry

- 2 pounds Fresh pitted cherries, cut in half
- 1/2 teaspoon Lemon juice, fresh
- 1 Tablespoon sugar

Combine ingredients in a bowl and set aside.
