Ingredients:

For the Vegetables:

  • 2 medium sweet potatoes, peeled and cut into 1/2-inch cubes

  • 2 tbsp honey

  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp grated fresh ginger (optional, or 1/4 tsp ground ginger)
  • Pinch of red pepper flakes (optional, for a little heat)
  • Salt and black pepper to taste

Instructions:

Step 1: Preheat Oven and Prepare Vegetables

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Sheet Pan: Line a large sheet pan with aluminum foil or parchment paper for easier cleanup, if desired.
  3. Toss Vegetables: In a large mixing bowl, combine the cubed sweet potatoes and broccoli florets. Drizzle with 2 tablespoons of olive oil, and season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and garlic powder (if using). Toss well to ensure all the vegetables are evenly coated.
  4. Spread on Pan: Spread the seasoned vegetables in a single layer on one half of the prepared sheet pan, ensuring they are not overcrowded. This allows them to roast and caramelize properly.

Step 2: Roast Vegetables (Initial Cook)

  1. First Roast: Place the sheet pan with the vegetables into the preheated oven. Roast for 10 minutes. This gives the denser sweet potatoes a head start.

Step 3: Prepare Honey-Glazed Salmon

  1. Make Glaze: While the vegetables are roasting, prepare the honey glaze. In a small bowl, whisk together the honey, soy sauce, 1 tablespoon olive oil, minced garlic, grated fresh ginger (if using), and red pepper flakes (if using). Season lightly with salt and black pepper.
  2. Season Salmon: Pat the salmon fillets dry with paper towels. Season both sides lightly with salt and black pepper.

Step 4: Add Salmon and Finish Roasting

  1. Add Salmon to Pan: After the vegetables have roasted for 10 minutes, carefully remove the sheet pan from the oven. Push the vegetables to one side of the pan to make room.
